
Dressing up an apple makes it a tastier between-meal snack, or morning treat on the run.
This recipe, developed for Produce for Better Health Foundation by chef Mark Goodwin, is part of a new health initiative designed to get Americans to eat better. The “Fruits & Veggies – More Matters” program suggests people eat from four to 13 servings, or 2-6.5 cups, a day. One serving of this recipe is an excellent source of fiber and a good source of vitamin C. And it takes less than 10 minutes to prepare.
So grab your books and this crunchy, sweet breakfast treat as you dash off to school, or settle down to do homework in the afternoon.
Bookworm Apple Bark
Ingredients
1 Granny Smith apple
1 tablespoon peanut butter
2K tablespoons golden or black raisins
1K tablespoons dried sweetened cranberries
1 small bunch of fresh chives or fresh parsley (optional plate garnish)
Directions
Cut apple into quarters, starting at the stem. Remove the core by cutting away to leave a flat surface on the apple quarter. Be careful not to cut too much of the edible portion of the apple away. Lightly spread the peanut butter on apple quarters. Mix together the raisins and dried cranberries then sprinkle on peanut butter. Cut chives into 1-inch pieces and garnish.
Per serving: 272 calories; 8g total fat (1.5g saturated fat; 5g protein; 50g carbohydrates; 6g dietary fiber; 79mg sodium
