Inspired by a recipe in Gourmet Magazine, August 1998. Makes 1 sandwich.
Ingredients
1 grilled chicken breast half
1/4 pound sugar snap peas
1/2 English cucumber
1 scallion
A few fresh mint leaves
1/2 teaspoon minced peeled fresh ginger
3/4 tablespoon olive oil
3/4 tablespoon fresh lime juice
Directions
Discard chicken skin and cut meat crosswise into 1/4-inch- thick slices. Trim peas. Halve cucumber lengthwise and seed. Diagonally cut peas, cucumber and scallion into thin slices and chop mint. In a large bowl toss all ingredients and season with salt and pepper.
Pile on white bread.
