Inspired by a recipe from “The Cooks Illustrated Guide to Grilling and Barbecue.” Serves 4 to 6.
Ingredients
1/3 cup soy sauce
3 tablespoons vegetable oil
3 tablespoons sesame oil
2 tablespoons dark brown sugar
2 tablespoons minced fresh ginger
Zest from one orange, at least 2 teaspoons
2 scallions, sliced thin
1 London broil or top round beef, about 2 pounds
Directions
Combine all marinade ingredients in bowl. Place meat in a baking dish and cover with marinade, or place meat in a gallon-size Ziploc bag, cover with marinade, and seal. Place meat in the refrigerator for at least 6 hours, preferably 12-24 hours.
