Patty Ruwoldt’s Huevos Rancheros
Serves 2
Ingredients
1 10-ounce can beef gravy, or save weight with a reconstituted powdered equivalent
½ cup salsa, canned or packed in frozen cubes
4 eggs
4 12-inch tortillas
Grated cheddar cheese
Directions
Combine the beef gravy and salsa in a saucepan over medium-low heat. Fry the eggs over easy or to preference.
Place two eggs on a tortilla and fold it in half. Sprinkle cheddar cheese over the top. Pour gravy over the cheese and serve. Follow the same procedure for the second one. Serve each with an extra tortilla to sop the gravy, or load it with butter and jelly.
