Motorcycle riders know good barbecue. That must be why the parking lot outside Hog Heaven Pit Bar-B-Que east of Bailey always is packed with burly bikes. Hog Heaven pit-smokes all its meat, as opposed to drenching a charred chunk in sauce and calling it ‘cue. Pit smoking is true Southern ‘cue, and Hog Heaven has its smoking down to an art. Brisket that melts. Ribs that drip off the bone. Chopped pork, sausage links and smoked chicken slow-cooked in a swarm of smoke. The roadhouse ferries visitors into the Deep South with its sides of black-eyed peas, fried okra, sweet potato fries and fried cabbage. Desserts including Frog Eye Salad, bread pudding and sweet potato pie lend to the Southern authenticity.
