The fires still burn at the century old blacksmith shop in Carbondale. Only instead of irons in the fire, it’s chiles and eggs. The Village Smithy is Carbondale’s gem. A breakfast-all-day joint packed with breakfast-for-dinner locals, the Smithy has unquestionably the best omelettes, deep-fried French toast, homemade salsa and pork green chile in the Roaring Fork Valley. And the Smithy has been at it since 1975, nearly three decades before Carbondale became the hip, vibrant village it is today. Owner Charlie Chacos, son of the Village Smithy founders, takes obvious pride in the food that comes out his kitchen. This is not typical hash-slung breakfast. To wit: nutty avocado Gruyere omelettes, blueberry cornmeal pancakes, cornmeal cakes baked with bacon, green chiles and cheddar. Lunch mirrors the love Smithy’s cooks show breakfast, too.
