Aspen can be a tricky spot to grab a quick bite. The local McDonald’s does brisk business, but parking, even for a moment, is a true hassle. The line at New York Pizza often merges with the line from the Popcorn Wagon on the pedestrian mall, making both a hungry wait. But there is hope for the dashing eater seeking quality on the fly. Just follow the musical horn. Between 10 a.m. and 2 p.m., John Swim’s Aspen Catering truck sidles up to a host of construction sites in Aspen – there are a lot of those – and props open his doors. Inside the silver-sided truck are super-affordable steak dinners that cut with a plastic fork, thick egg sandwiches and entrees such as chicken-fried steak with gravy. Steaming coffee, cold drinks and all the trimmings for a speedy feed are abundant in the drive-up wagon. For 25 years Swim’s Pied Piper musical horn has signaled chow time for Aspen. Each dish is handmade daily by Swim and his team. He also offers full catering and all the goods for a large party.
