Salumi: sahl-OO-me, Italian. Cured, aged whole cuts of meat such as prosciutto, pan- cetta and bresaola. These cold cuts are usually sliced thin and sold in Italy in salumerias. Not to be confused with salami, which is ground meat in a casing. Frasca Food and Wine in Boulder, Luca d’Italia and Prima serve salumi plates.|Kristen Browning Blas|
