Colorado’s north country is filled with lots of surprises, not the least of which is The Clark Store. At the last spot to provision before reaching Steamboat Lake State Recreation Area, you’ll find fishing licenses, hand-dipped ice cream and a menu of gourmet sandwiches created by a Bon Appetit magazine-honored camp chef, plus a little something to take home with you: pint jars of silky Sweet Potato Butter. No telling how this Southern staple found its way into the heart of Routt County, but we’re glad it did.
