The variety of colors and blend of tastes offered by these easy-to-make individual pizzas are sure to please both children and adults. And the ingredients fit right in with a public health initiative launched a week ago to get Americans to eat more healthy foods. The “Fruits & Veggies – More Matters” program aims for people to eat from 4 to 13 servings, or 2 to 6.5 cups, per day depending on their calorie need.
A serving of this recipe, developed for Produce for Better Health Foundation by Carmen I. Jones, provides an excellent source of vitamin A and a good source of vitamin C, folate and fiber.
