Don’t be surprised if there’s a line out the door when you stop in at Pazzo’s Pizzeria in Vail. It’s not unusual, but it is for good reason. This hole in the wall near the heart of Vail Village has become a local institution over the course of nearly 20 years, serving what many consider the best pizza in a valley where restaurants are often dismissed before their dough begins to rise. Sample a signature pie or build your own from a menu of more than 20 ingredients. The Greek salad is a classic, as are the plump calzones and Italian staples like lasagna and chicken parm.
