
The Ellisons found that Poppies brand eclairs were so close to Sue’s mother’s old Solitaire Cookbook recipe, they decided on this one shortcut and piped on homemade frosting with a pastry tip.
To make the frosting:
Ingredients
1 cup (8 ounces) powdered sugar
1/4 cup cocoa (Hershey’s, natural unsweetened)
1 tablespoon Mexican vanilla
1/2 teaspoon almond extract
5 tablespoons heavy whipping cream
Directions
Place ingredients in a mixing bowl; beat. Add more powdered sugar if it is too thin, or a few drops of cream if it is too thick. Fill a pastry bag fitted with a piping tip, or spread with a spatula. Pictured third from left, above.
Almond Horns
Marzipan rolled into a horn shape, dipped in whipped egg whites, rolled in sliced almonds, and baked at 350 about 12 minutes, or until slightly brown. Pictured second from left, above.
White Chocolate-dipped Apricots with Pistachios
Melt white chocolate, dip 3/4 of apricot into white chocolate, then cover most of the white chocolate area with finely chopped green pistachios. Pictured fourth from left, above.
Medjool Dates Stuffed with Marzipan
Remove pits from dates, stuff with marzipan, press a whole pecan or walnut on top of each.Pictured far right, above.
