I just went to a terrific restaurant in Steamboat Springs called The Epicurean (825 Oak St., 970-875-0997, www.theepicurean.us). The chef is Rebecca Pauvert, her husband, Marco, makes the charcuterie. He’s from the French Alps and very cute. They are making unbelievably good patés and sausages, as well as other goodies, which they sell from a display case in the restaurant. I am publishing their artichoke gratin recipe in my new book, “Urban Preservation” (to be published by Clarkson Potter in 2008).
