Here’s a great idea for leftover doughnuts. From “Gentlemen, Start Your Ovens,” by Tucker Shaw. Serves 4.
Ingredients
CREAM CHEESE DIP:
1 pound powdered sugar
A few gratings of nutmeg
2 tablespoons cream cheese
Zest of 1 orange
4-6 tablespoons fresh orange juice (get it from the same orange you just zested)
DOUGHNUTS:
4 cake doughnuts, nice and firm
2 eggs
1/2 cup milk
1 tablespoon unsalted butter, or more as needed
Directions
Make the dip: Mix together dip ingredients in a microwave-safe bowl. Microwave on high 30 seconds, then remove and stir vigorously. Add more orange juice if necessary to reach the desired dipping consistency. Set aside.
Make the doughnuts: Slice the doughnuts in half through the middle, like you would slice a bagel. Beat eggs with milk in a shallow dish. Dip doughnut slices into the egg mixture, coating completely.
In a large sauté pan over high heat, melt butter until it foams. Fry coated doughnut slices in batches (don’t crowd the pan), flat-side down, until browned on the bottom. Flip. Continue cooking until browned on both sides. Add a little more butter if needed. Serve hot with cream cheese dip.
