For as long as I can remember, my mom, Lanell Huckabay, has made this strawberry-nut bread, which is made with jam, and given loaves away as gifts around Christmastime. Makes 2 loaves.
Ingredients
1 cup butter, room temperature
1 1/2 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
4 eggs
3 cups sifted flour
1 teaspoon salt
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1 cup strawberry jam
1/2 cup sour cream
1 cup chopped walnuts
Directions
In mixing bowl, cream butter, sugar, vanilla and lemon extracts. Add eggs one at a time, beating well after each addition. Sift flour, salt, cream of tartar and soda. In separate bowl, combine jam and sour cream. Combine sour cream mixture alternately with dry ingredients to creamed butter mixture, beating until just combined. Fold in nuts.
Bake in two well-greased loaf pans at 350 degrees for 50 to 55 minutes. Cool 10 minutes in pans, remove, cool on wire racks.
