Chinois: sheen-WAH, French. An extremely fine-mesh conical metal sieve used for straining fruit, vegetables, soups and sauces. You usually have to use a spoon or pestle to push the food through. Comes in handy for jam-making. Look for a chinois at restaurant supply stores, specialty kitchen shops or online.
