
This is a Catering by Design favorite for the holidays. Makes 2 cups.
Ingredients
3/4 cup sugar
1 envelope unflavored gelatin
1/2 cup water
1 cup whipping cream
1 1/2 cups sour cream
1 teaspoon vanilla extract
1 cup seasonal berries
Mint sprigs
Directions
In a small saucepan, blend sugar and gelatin. Add water and mix well. Let stand for 5 minutes. Stirring constantly, bring to full boil.
Remove from heat and add whipping cream. In a separate mixing bowl, mix sour cream and vanilla. Slowly add sugar-cream mixture. Cover and chill for at least 4 hours or overnight.
Serve in individual martini glasses, small parfait glasses or bowls. Add fresh seasonal berries of your choice on top. Garnish each with a mint sprig.
Wine ideas: The tang of sour cream cuts the sweetness of this dessert, making it easier to pair with dessert wines. If you were to use red berries, Rimon’s garnet-hued pomegranate wine (reviewed here last week) would make a marvelous-and gorgeous -match; if you decide to swap the berries for citrus-say, mandarin oranges in syrup – Quady’s Orange Muscat Essencia (about $20) would be fitting.
