This recipe comes from and makes about one pint. Get started on it the day before you plan to serve it, because relish needs to sit around a bit to reach maximum flavor.
Ingredients
1 cup peeled, seeded & chopped cucumber
1 cup chopped onion
1 cup chopped red pepper
1 cup chopped green pepper
1 tablespoon pickling salt
2/3 cup sugar
1/2 cup white wine vinegar
2 teaspoons dry mustard
1/2 teaspoon grated fresh ginger root
1/4 teaspoon ground turmeric
1/8 teaspoon ground allspice
1/8 teaspoon cayenne
1 clove garlic, minced
Directions
In colander, place cucumber, onion, red and green peppers. Sprinkle with pickling salt. Toss lightly to mix. Let colander stand over bowl for 1 1/2 hours, stirring occasionally. Place salted vegetables in 1 1/2 quart casserole. Add remaining ingredients. Mix well. Microwave at high 20 to 30 minutes or until mixture thickens slightly, stirring twice. Spoon mixture into sterilized 1-pint jar. Cover and refrigerate overnight before serving. Store relish in refrigerator for no longer than 1 month.
