From Sue Henderson, makes about 2 dozen cookies. Her grandkids love these.
Ingredients
1/2 cup butter
1/3 cup brown sugar
1 cup flour
1/2 cup chopped peanuts
1 cup chopped dates
1/2 cup chocolate chips
1/4 cup water
Directions
Preheat oven to 350 degrees.
In a large bowl, mix butter, brown sugar and flour until dough forms. Stir in peanuts. Crumble onto a rimmed cookie sheet. Bake at 12-15 minutes until golden. Cool.
Combine dates, chocolate chips and water in a medium saucepan and cook over medium heat until thick. Cool.
Stir in 2 1/4 cups peanut crunch mixture, broken into small pieces. Crush remainder of it on cookie sheet. Shape chocolate mixture into two 8-inch rolls. Roll in crushed mixture. Wrap and store in fridge. Cut into 1/4-inch slices and serve.
