I took the fudge recipe I grew up using, switched the vanilla for peppermint extract, and added crushed candy canes to the middle and the top. Crushing the candy canes was a great distraction for the kids (Kate is pictured at the right) while I fixed the fudge (although I wouldn’t recommend trying to crush them with a rubber mallet in their thin wrappers. Ingredients
- 3/4 cup (1 1/2 sticks) butter
- 3 cups sugar
- 2/3 cup evaporated milk
- 12 ounces chocolate chips
- 1 7-ounce jar marshmallow cream
- 1 teaspoon peppermint extract
- 1/2 to 3/4 cup crushed candy canes, plus some for top
Directions
In a large saucepan over medium heat, melt butter, sugar and milk. Bring to a boil and cook 5 minutes, stirring constantly. Stir in chocolate chips until melted. Add marshmallow cream, peppermint extract and crushed candy cane.
Pour into greased 9-by-13-inch pan. Sprinkle with remaining crushed candy canes. Cool at room temperature, cut, and store covered in fridge or freezer.
