This recipe came from the late Rita Peters, who worked with Jeannie Ritter in an elementary school cafeteria. Makes 12 bars (or more if you cut them smaller).
Ingredients
2 cups flour
1/2 cup powdered sugar
1 cup (2 sticks) butter or margarine
4 beaten eggs
2 cups granulated sugar
1/3 cup lemon juice
1/4 cup flour
1/2 teaspoon baking powder
Directions
Preheat oven to 350 degrees.
In a large bowl, mix flour and powdered sugar. Cut in butter or margarine until it clings together. Press into a 13-by-9-inch pan. Bake 20 minutes or until lightly browned.
In a large bowl, beat eggs, sugar and lemon juice. Combine flour and baking powder. Stir into egg mixture. Pour over baked crust. Bake in 350-degree oven 15-20 minutes. Sprinkle with powdered sugar. Cool. Cut into bars.
Wine ideas:
These are so sweet and tangy that no wine stands a chance; instead, try a bit of limoncello, an Italian lemon liqueur, or a shot of grappa to cut the sweetness.
