Ingredients

   1 bone-in fully cooked ham

  1/2 to 1 cup yellow mustard

  1/2 to 1 cup cup brown sugar

Directions

Preheat oven to 350 degrees.

With a small, sharp knife, score sides of ham in a diamond pattern. Make a paste of the mustard and brown sugar and rub all over ham. Bake about 30 minutes until sugar caramelizes.

Wine ideas:

Rose is the perfect ham wine. The red fruit flavors accent the meat, while the light texture and bright acidity keep the combination lively despite the sweet richness of the meat. The deep cherry flavors of the Crios de Susanna Balbo Rose of Malbec ($11) would be particularly tasty, or opt for a lighter, earthy pink with Perrin Reserve Côtes-du-Rhône rose ($11).
