
This silky, bright side dish uses maple syrup to highlight the naturally sweet yam. Blending turns it into a comfort food for everyone from infants to elderly relatives. It also makes a marvelous soup – just whisk in a quart of chicken or vegetable broth after transferring the mixture from the food processor or blender. Serve with crusty bread, a green salad and roasted chicken.
Ingredients
- 6 medium yams, peeled and cubed
- 1/4 cup maple syrup
- 3/4 cup evaporated skim milk
- 1 teaspoon salt
- 3 tablespoons butter or margarine
- 1 teaspoon cumin
Directions
In a saucepan, cover yam cubes with water. Bring to a boil. When the cubes are tender (about 20 minutes), drain and cool. Put cooked yams in food processor or blender, and add butter, salt, cumin, milk and syrup. Transfer to a serving dish and pop it into the microwave for 2-3 minutes, or until steaming hot. Serves up to 8.
