Makes about 2 cups.

Ingredients

 1 head garlic

 1 medium onion

 2 tablespoons butter

 1 pint sour cream

Directions

Preheat oven to 400. Cut a head of garlic in half, wrap in aluminum foil and roast 30 minutes. Let cool, then squeeze out garlic and set aside.

Meanwhile, slice onion into half-rings. Melt butter in medium saute pan over medium heat until melted and bubbling. Add onion and cook until brown, about 15 minutes. Set aside to cool.

Mix together garlic, onions and sour cream. Cover with plastic wrap and refrigerate at least 1 hour.

Make it super: Add a couple of slices of cooked-and-crumbled bacon to the mix.
