Radish Butter

Spread this on pieces of bread torn from a fresh loaf. From “Local Flavors” by Deborah Madison. Makes 1/2 cup.

Ingredients

6    radishes

4    tablespoons unsalted butter

1    teaspoon grated lemon zest

Sea salt to taste

Directions

Wash and trim the radishes. Slice into thin rounds, then crosswise into narrow strips.

Mix the butter with the lemon zest until it’s soft, then stir in the chopped radishes and salt. Serve.
