Loosely inspired by a recipe from “A Culinary Life” by Susur Lee for Thai Shrimp Salad. Makes 1 sandwich.
Ingredients
1 cup chopped cooked shrimp
1/2 cup diced mango
1 tablespoon diced shallot
Zest of 1 lime
1 tablespoon freshly squeezed lemon juice
1 tablespoon chopped cilantro
Minced hot chile of your choice, to taste
A few crushed peanuts
Pinch sea salt
Brioche roll
Directions
Stir together shrimp, mango, shallot, lime zest, lemon juice, cilantro, chile, peanuts and sea salt. Pile on brioche.
