Kudos for the revamped Food section of the Post. I look forward to more of your very “readable,” informative and entertaining columns. I do have two questions about your grilling suggestions.
Why should the grill be cleaned and oiled only after it is pre-heated? How can those two tasks be done safely, e.g., how should even room temperature olive oil be applied to a hot grill? — Vic Reichman
Preheating the grill loosens the baked-on gunk, making it easier to clean. And I always soak a paper towel with oil (not over the grill) and use tongs to rub it over the grate. It does get hot, but doesn’t burn. You could oil it and then heat it, too. Thanks for taking the time to write!

Easy! Here’s how we make ours.Cosmopolitan Martini
Ingredients
1 ounce vodka
1/2 ounce Cointreau or Triple Sec
Splash cranberry juice
Splash sweetened lime juice, such as Rose’s
Directions
Fill cocktail shaker halfway with large ice cubes. Add vodka, Cointreau, cranberry juice and lime juice. Shake 30 seconds, until frost forms on exterior of the shaker. Strain into a chilled martini glass and garnish with a lime round. Commence gossiping.
