Credit for this cocktail goes to New York City caterer David Ziff who knows well how a cool cocktail can liven up a summer dinner party. Makes one blenderful.
Ingredients
6 ounces frozen lime juice concentrate (about half a can)
3 ounces vodka
1/2 cup fresh mint, loosely packed
1/2 cup water
3 cups crushed ice
Directions
In a blender, mix the the lime juice concentrate and half the mint until pureed. Add the water, ice and the remaining mint and pulse in five-second bursts until the liquid is just smooth enough to go through a straw. Do not overblend, or your ice will melt.
Pour into a tall chilled glasss and garnish with a sprig of mint. (Make it virgin: Skip the vodka.)
