Hey, Chef! I’m halfway through my chocolate chip cookie recipe, and my brown sugar is all dried out. Help!

Cover brown sugar with a damp paper towel in a bowl and microwave it for 1 minute to remoisten it. Some people say you should place a piece of bread in the bag with it but I think that’s kind of gross. Or, make your own brown sugar by combining 9 parts white sugar and 1 part molasses. It tastes much better than store-bought brown sugar. You won’t believe it.
