Help! I caught a fish! It’s a beautiful 10-inch Colorado trout. It’s cleaned, but now what?

At the restaurant we do a smoked trout that would be easy to replicate at home. Sprinkle 2 tablespoons brown sugar and 2 tablespoons salt in the cavity and on the outer skin. Let sit one hour. Meanwhile, soak applewood chips in water. Preheat grill to 350. After trout has cured, add the chips to the grill to begin to smoke. Place the trout on the grill, cover the grill and cook for 10 minutes. Remove trout, chill and serve with potato chips, chopped onions and sour cream.
