From “The Anatomy of a Dish,” by Diane Forley. Sprinkle these over pasta or green beans, or use in meatballs.

Ingredients

1    day-old baguette

Directions

Preheat the oven to 250 degrees. Break the baguette into pieces. Place the pieces on a baking sheet and dry the bread thoroughly in the oven, about 35 minutes. Transfer the bread to a food processor and finely grind. Store in a cool, dry place.
