Your recipe calls for salt-packed anchovies, but the only anchovies I’ve ever seen are packed in olive oil or as paste. Where can I find salt-packed anchovies?

First things first: If all you can find are anchovies in olive oil, don’t despair, and don’t hesitate to use them. They are fine for most recipes.
Many cooks prefer salt-packed anchovies, however, because they keep longer and have a sharper, more even flavor than many oil- packed anchovies.
You can find salt- packed anchovies at a few local Italian specialty grocers (call your favorite), or you can order them online from Zingerman’s, at .
And if you’re lucky enough to score fresh anchovies, you can easily cure them yourself: Just clean them, then pack them with salt and refrigerate for about a week.
