The 12-year-old with the new braces wants something soft and “not sour” for dinner. But there’s no cream or even a jar of Alfredo sauce in the fridge, so we improvise and come up with a fresher, lighter, cheaper “cream” sauce.

No-cream Alfredo Sauce

By Kristen Browning-Blas, serves about 4.

Ingredients

2      tablespoons butter

2      tablespoons flour

       White pepper

       Salt

2      cups whole milk

1      teaspoon Dijon mustard

4      ounces cream cheese

1/2   cup grated parmesan cheese

Directions

Melt butter in a medium pan. Sprinkle flour over butter and cook, stirring occasionally, until roux turns pale gold. Add salt and white pepper to taste. Add milk gradually, stirring with a whisk until smooth. Add mustard and cream cheese and stir until melted. Add parmesan, and stir until melted. Serve over cooked pasta.
