I need my knives sharpened, but I’m not sure where to go. Can you help?

Even if you hone your knife with a honing steel every time you use it (which you should do), knives need periodic attention from a pro. Honing smooths everyday knicks, but professional sharpening creates the sharp angle needed to transform a slab of metal into a cutting blade.

The holidays are almost here, so do it now. If you’ve never had your knives serviced, you’ll be astonished at how much of a difference it makes.

Your best bet is to chat up your neighborhood butcher. Many of them offer knife sharpening services — you drop your knives off, they have yours serviced alongside their standing sharpening order, and you pick your knives up a day or two later. Most charge by the inch. Serrated knives and scissors may be more expensive to service, if they do them at all.

Both Denver locations of Sur La Table offer 24-hour knife sharpening for $1 an inch. (Cherry Creek mall and Belmar — check for contact and location information.)

Most experts recommend having knives sharpened twice a year, but an annual sharpening is adequate for most home cooks. Just remember to make dinner reservations for the night your knives are out.
