Ingredients
2 carrots peeled
1 bunch radishes
1 bulb fennel
2 red or golden beets
A few fresh water chestnuts
1 bunch frisee or 1 bag arugula and/or baby spinach
1 bunch red leaf lettuce, cleaned and torn
1/4 cup pickled onions, chopped
Toasted pumpkin seeds to taste
Directions
Slice first five ingredients thinly by hand or with a mandoline. Toss with greens, pickled onions and toasted pumpkin seeds. Toss all with pumpkin seed vinaigrette (below).
Pumpkinseed Vinaigrette

Ingredients
1/2 cup plus 1 tablespoon pumpkinseed oil
3 tablespoons vinegar
1 tablespoon minced shallot (optional)
Salt and pepper to taste
Directions
Whisk together ingredients and season to taste.
