Ingredients
For the dressing
3 tablespoons freshly squeezed orange juice
3 tablespoons freshly squeezed lime juice
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 teaspoon salt
Freshly ground black pepper
1/3 to 1/2cup extra virgin olive oil
For the salad
8-10 cups bagged prewashed baby spinach (about 8 ounces)
1 large, firm, highly flavored, sweet-tart apple, cored and thinly sliced (leave skin on)
1/2 cup thinly sliced red onion
1/4 cup gorgonzola dolce
Directions
In a small bowl, combine the orange juice, lime juice, mustard and honey. Season with a little salt and pepper. Slowly whisk in the oil to achieve an emulsified dressing.
Put the spinach, apple and red onion in a decorative salad bowl and toss with the dressing. Sprinkle the cheese over the top and serve.
