Adapted from “Swedish Cakes and Cookies” (Skyhorse Publishing). Makes about 20 cookies.

Ingredients

3     tablespoons butter, softened

3     tablespoons sugar

1/2   teaspoon ground ginger

1/4   teaspoon vanilla

1/3   cup all-purpose flour

Directions

Preheat the oven to 400. Beat the butter, sugar, ginger and vanilla until light and fluffy. Add the flour, mixing until smooth. Spread the batter in 3 inch circles, far apart, on greased and floured baking sheets.

Bake on the center oven rack for about 5 minutes.

Loosen cookies with a sharp knife while still warm. Roll around the handle of a wooden spoon until hardened and cooled.
