Use a festively-colored jam, such as raspberry. Or use lemon curd. Tested at high altitude. Makes about 30 sandwich cookies.
Ingredients
1 batch All-in-One cookie dough (see cover)
About 1/2cup jam
Powdered sugar for sprinkling
Directions
Prepare cookie dough.
Preheat oven to 350. Roll out dough to about 1/2-inch thickness, and cut into circles using a round biscuit or cookie cutter. Use a smaller cutter to cut a hole in half the to create an O-shape. Bake on a parchment-lined cookie sheet for 13-15 minutes, and cool until just cool enough to handle.
Place a small dollop of jam on each round cookie (about 1/2 teaspoon), and top with an O-shaped cookie. Sprinkle with powdered sugar.
