
Tis the season for peanut brittle. But tis NOT the season to spend upward of $6 for 4 ounces of the stuff. Make your own (it’s easier than you think) and you’ll save enough for a latte.
Peanut Brittle
Makes about 1 pound.
Ingredients
2 cups sugar
1 cup corn syrup (light)
1 cup water
Pinch salt
2 cups salted peanuts, shelled
2 tablespoons butter
1 teaspoon baking soda
Directions
Line a baking sheet with aluminum foil and spray foil with nonstick cooking spray. In a medium saucepan, stir together sugar, syrup and water in over medium heat until sugar dissolves. Add salt. Insert candy thermometer and cook until it reaches 250 degrees. Stir in peanuts. Continue to cook to “hard crack,” 290 degrees.
Remove from heat and quickly stir in butter and baking soda. Beat for a few seconds as it froths up. Pour onto baking sheet and spread with spatula until even. Cool completely and break into pieces.
