Re: “Yeasty questions rise a mile high,” Feb. 4

I teach bread baking and always try to encourage young women to try it. Once over the mystery of yeast, they discover that it is so easy and so much cheaper than purchasing bread regularly. There is a discrepancy in the amount of yeast on Page 4D: “For each envelope (2 1/4 tablespoons of Fleischmann’s and 2 1/2 of Red Star) . . .” Perhaps Fleischmann’s has increased the amount of yeast along with the increase in price, but I seriously doubt it and am not going to find out by spending $2.99 for three packages when I spend $3.69 for 2 pounds of yeast at Costco.

That was our error. Fleischmanns’ packet contains 2 1/4 teaspoons and Red Star, 2 1/2 teaspoons. Speaking of errors and bread, the Basic Soft White Sandwich Loaf recipe had some typos, including missing the word “cup” in the sponge ingredient list. It should call for 1/4 cup dry milk. The corrected recipe appears online at denver . I apologize for the confusion.
