A common side dish in southern and eastern Africa, ugali is similar to polenta or grits. From The Palava, this recipe does not call for salt, but American palates will probably want to add some.

Ingredients

4        cups water

1 1/2   cups (12 ounces) finely ground corn meal

Directions

Bring water to a boil in a large pot. Gradually add corn meal and mix into a soft dough. Cover the pot and turn heat to low. Cook for approximately 10 minutes. Knead the mix using a wooden spoon into portion-size servings. Serve as a side with your favorite meat sauce, curry or vegetables.
