Ingredients
2 pounds lamb ribs
Spice rub (recipe below)
Whiskey barbecue sauce (recipe below)
1/3 cup Dijon-style mustard
Directions
Rub lamb ribs all over with spice rub. Refrigerate overnight.
Preheat oven to 400 degrees. Place the ribs on a baking sheet and roast for 3 hours. Starting halfway through the cooking process, use a spoon or turkey baster to baste the ribs with their rendered fat, about every 15 minutes or so.
During the last half-hour of cooking, brush the ribs with some of the barbecue sauce, every 10 minutes or so. The ribs are done when the meat begins to fall off the bone.
To serve: Brush the ribs with a layer of mustard, then with more barbecue sauce. Serve with potato salad or coleslaw.
Spice Rub
Ingredients
1 tablespoon kosher salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Directions
Combine all ingredients.
Whiskey Barbecue Sauce
Ingredients
4 cups tomato puree
1/3 cup red wine vinegar
1/2 cup brown sugar
1/2 cup molasses
1/2 cup diced yellow onion
1/2 cup diced smoked bacon
3 tablespoons chipotles in adobo
2 teaspoons ground cumin
Pinch salt
1/2 cup premium whiskey such as Stranahan’s
Directions
In a heavy bottomed pot, combine all ingredients except the whiskey. Cook over low heat for 1 hour, until the bacon and onions are soft. Blend, and add the whiskey.
