Recipe by Christopher Olchowy. Serves 7-8.
Ingredients
1 beef brisket, about 3 to 4 pounds
1 cup ketchup
1/2 cup Dijon-style mustard
1 envelope Lipton onion soup mix
1 2-liter bottle of Coca-Cola (not diet)
Directions
Preheat oven to 325 degrees. Place brisket fat side up in a deep baking dish or roasting pan. In large bowl, mix together remaining ingredients. Pour over brisket.
Cover pan tightly with foil and place in oven. Bake for 3-4 hours, or until knife-tender.
Remove brisket from pan, cover loosely with aluminum foil and let rest 20 minutes. Pour remaining liquid into a saucepan and bring to a boil. Reduce liquid until desired sauce consistency is reached.
Slice brisket thinly against the grain and serve with sauce. Serve with potato pancakes and sauteed green beans.
