The charming new cookbook by Amy Treadwell and Sarah Billingsley, “Whoopie Pies,” (Chronicle Books) offers dozens of mix-n-match variations on the theme, from the classic chocolate-with-marshmallow filling to a red velvet whoopie and even a gluten-free vanilla whoopie pie. Recipes are not optimized for mile-high cooking, but a small reduction in leavening seemed to do the trick. Available at bookstores now.
