Recipe by Tucker Shaw. This is great on a grilled rib-eye, pork loin, lamb chop, piece of fish or spread on a sandwich.
Ingredients
2 1/2 cups fresh mint leaves
1 small shallot, chopped
1 garlic clove, minced
Healthy splash (about 1 1/2tablespoons) red wine vinegar
1 teaspoon honey, or to taste
1 pinch red pepper flakes
Zest of 1 lemon
1 tablespoon capers (optional)
1/2 cup extra-virgin olive oil
Salt
Directions
In a blender or food processor, puree mint, shallot, garlic, vinegar, honey, red pepper flakes, lemon zest, capers and olive oil. Adjust oil amount or mint amount if needed for texture or color. Season with salt.
