Spoon this over baked chicken or grilled fish. From “The Best of America’s Test Kitchen 2011.” Makes about 1/2 cup.

Ingredients

6     tablespoons ( 3/4stick) unsalted butter

1     plum tomato, cored, seeded and diced

1     tablespoon grated fresh ginger

1     tablespoon fresh lemon juice

1/4   teaspoon red pepper flakes

      Salt

Directions

Heat the butter in a small heavy-bottomed saucepan over medium heat, swirling the pan constantly, until the butter turns dark golden brown and has a nutty aroma, 4 to 5 minutes. Add the tomato, ginger, lemon juice and red pepper flakes, and cook, stirring constantly, until fragrant, about 1 minute. Season with salt to taste. Cover to keep warm.
