[Shau-shing] An undistilled, aged Chinese wine made from fermented rice, part of the family of huangjui wines. While some people drink it as a beverage, shaoxing wine is also used widely in cooking, particularly in marinades. Its flavor (brassy but smooth and slightly nutty) is similar to dry sherry. Shaoxing wine gets its reddish hue from red yeast rice.
