Note: Palm sugar is available at most Asian markets. Serves 4.
Ingredients
12 ounces soft or silken tofu, cut into 1-inch cubes
1 cup palm sugar
3/4 cup water
1/2 cup peeled ginger, cut into 1-inch batons
Directions
Place the tofu in a mixing bowl and refrigerate.
In a small pot, bring the palm sugar, water and peeled ginger to a boil and simmer over low heat for 30 minutes. Add a little water to the syrup if it gets too thick. Cool and refrigerate.
To assemble, gently toss the tofu with aboutcup of the ginger syrup. Serve immediately.
Note: You will have a little ginger syrup leftover. It makes an excellent flavoring for a cocktail, especially combined with orange or lime.
