DENVER—Chipotle Mexican Grill plans to launch a new Asian-inspired venture this summer in Washington.

The Denver-based company said Tuesday that ShopHouse Southeast Asian Kitchen will offer grilled and braised meats, vegetables, aromatic herbs, spicy sauces and garnishes. Similar to Chipotle’s burrito outlets, ShopHouse will have customers move along a service line and customize their meals.

Company founder and co-CEO Steve Ells said he believes the Chipotle model of offering sustainably-raised ingredients with a menu that customers can personalize can work with different cuisines.

The name comes from Asian shophouses, where families live upstairs and run restaurants or fresh markets on the ground level.
