Ingredients
1 sweet seedless watermelon, cut into bite-sized pieces
1/2 cup olive oil
1/4 cup rice vinegar
Pinch of black pepper
Butter or iceberg lettuce, chilled for presentation
3 ounces feta cheese
2-3 sprigs fresh mint leaves, thinly sliced
Directions
On a clean work surface, cube watermelon and transfer to a bowl. Add oil, rice vinegar and black pepper. Toss lightly.
Line a serving platter with a few chilled lettuce leaves. Arrange watermelon salad on the platter. Crumble feta cheese over watermelon. Chill until ready to serve. Before serving, sprinkle fresh mint leaves on top, add a quick twist of freshly ground black pepper over feta, for contrast.
